The Cooking for a Life Time Cancer Prevention Cooking School (Order Form)

Nutrition and physical activity are related to cancer risk.  The University Cooperative Extension in partnership with the American Cancer Society and local public health departments has been offering the Cooking for a Life Time Cancer Prevention Cooking Schools since 2006.  These schools teach participants about increasing fruits and vegetables, controlling calories, preparing more nutritious food at home, selecting healthier foods in the grocery store and making better choices when eating away from home. 

Objectives

Participants will be able to

  • Make lifestyle choices that reduce cancer risk.
  • Consume recommended amounts of fruits and vegetables.
  • Plan meals using the American Plate from the American Institute for Cancer Research.
  • Select foods at the grocery store lower in calories, saturated fat and sodium and higher in fiber and other healthy nutrients.
  • Prepare recipes with whole grains, lean meats, fish and poultry, fruits and vegetables and non-fat or low fat dairy foods.

Description

The program is available in two versions. One has 4 lessons and one has 3 lessons. The shorter version has been adapted for lower income audiences.  Each lesson includes a slide presentation on breast, cervical or colorectal cancer screening followed with a slide presentation on nutrition and/or physical activity.  The lessons then conclude with the demonstration of several recipes that are sampled by the audience. Numerous handouts, recipes and activities are included.

The original four lesson version has the following titles:

  • Color Wheel of Fortune – overview of the causes of cancer and the reason to increase fruits and vegetables
  • The New American Plate – basic meal planning to reduce cancer risk and increasing whole grains in the diet
  • Eating Out Taking Out – how to choose healthy foods when eating away from home
  • Shopping Right, Eating Right – a virtual supermarket tour to show how to use nutrition labels and ingredient lists to make better food choices

The 3 lesson “Third Edition” covers:

  • Color Wheel of Fortune – overview of the causes of cancer and the reason to increase fruits and vegetables with American Plate added
  • Shopping Right Eating Right – first half of the virtual supermarket tour focusing on label reading and focusing on the meat and dairy department and choosing breads, grains, fats. 
  • Revisiting the Grocery Store While Saving Money – second half of the grocery store tour focusing on frozen, boxed and canned foods, condiments and desserts. Unit pricing is also introduced.
