Makes 4 servings, 1 burrito each

You will need:

For the Zesty Sauce

  • 1 cup plain nonfat yogurt
  • 1 cup salsa (mild)

For the Breakfast Burritos

  • 4 flour tortillas (soft taco size)
  • ⅓ cup chopped bell pepper
  • ⅓ cup chopped green onion
  • ⅓ cup chopped lean ham
  • 8 eggs
    • OR 16 oz. pasteurized liquid eggs
  • ½ teaspoon black pepper
  • 1 cup shredded 2% cheddar cheese 

Microwave Steps:

  1. Spray a medium microwave safe bowl with non-stick cooking spray.
  2. Add bell pepper, onion, ham, eggs, and black pepper.
  3. Cook in microwave 3 minutes. Stir to scramble.
  4. Cook 3 minutes more and stir to scramble.
  5. Continue heating in 30 second intervals until eggs are firm and not runny,stirring to scramble. (30 seconds to 1 minute more)
  6. Remove from microwave and sprinkle cheese on top. Cover and set aside.
  7. Place tortillas on a plate and cover with a damp paper towel. Heat tortillas for 30 seconds.
  8. Spoon egg mixture down center of the tortilla.
  9. Fold bottom of tortilla up and edges in. Repeat with remaining tortillas.
  10. Serve with Zesty Sauce on the side.

Stovetop Steps:

  1. In mixing bowl, make Zesty sauce by mixing yogurt and salsa.
  2. Heat tortillas in electric skillet until warm (about 1 minute each). Wrap in foil.
  3. Spray skillet with non-stick spray.
  4. Put bell pepper, green onion and ham into skillet and stir-fry about 2 minutes over medium heat until vegetables start to soften. 
  5. Add eggs and black pepper to skillet and stir often to scramble. 
  6. Cook until eggs are set and not runny.
  7. Sprinkle cheese on top, cover, and turn off heat.  Let stand 1 minute so cheese can melt.  
  8. Spoon ¼ of mixture down center of tortilla.
  9. Fold bottom up and side edges in. Repeat with remaining tortillas.
  10. Serve with Zesty Sauce on the side.
