Makes 4 servings, 1 pizza each

You will need:

  • 4 whole wheat 8” tortillas
  • 2 cups spinach
  • 1 1/3 cups diced yellow bell pepper
  • 40 slices turkey pepperoni
  • 1 cup shredded 2% mozzarella cheese

For the pizza sauce

  • 8 oz can tomato sauce, no salt added
  • 2 teaspoons Italian seasoning
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Directions:

  1. Heat skillet to 375° and spray with cooking spray.
  2. Pour tomato sauce in bowl and add Italian seasoning, garlic powder, and black pepper. Mix well.
  3. Add diced bell pepper to one corner of skillet and 10 pepperoni slices to another.
  4. Place tortilla in middle of skillet. Toast tortilla on skillet for 6-8 minutes.
  5. Flip tortilla over. Spread 2 tablespoons of tomato sauce on pizza. Top tortilla with 1/2 cup of spinach, 1/3 cup diced bell pepper, and 10 pepperoni slices. Spread 1/4 cup cheese evenly over pizza.
  6. Place the lid on the skillet and allow cheese to melt (about 6-8 minutes).
  7. Remove pizza from skillet. Slice and serve.
