Makes 4 servings, 1 cup each
You will need:
6 oz. soy crumbles
½ medium onion, chopped
½ cup chopped green bell pepper
1 teaspoon vegetable oil
14.5 oz. can diced tomatoes, undrained, low sodium
1 ¼ cup water
½ teaspoon chili powder
½ teaspoon oregano
½ teaspoon sugar
4 oz. whole grain spaghetti, crumbled
½ cup shredded 2% mozzarella cheese
Put onion, bell pepper, and soy crumbles in a large, microwave safe bowl. Add oil and stir.
Heat 3 minutes and stir.
Add tomatoes with liquid, water, chili powder, oregano, sugar, and spaghetti and stir together. Push noodles down into the liquid, making sure they are covered with liquid.
Heat 5 minutes and stir.
Push noodles down into liquid and heat another 5 minutes.
Stir then heat again for 4 minutes.
Sprinkle cheese on top. Microwave for 30 seconds, until cheese is melted.
Sauté soy crumble, onion, and green bell pepper in oil.
Add tomatoes with liquid, water, chili powder, oregano, and sugar. Bring to a boil.
Crumble spaghetti. Add to the skillet.
Cook covered until noodles are tender, about 9-10 minutes, stirring every few minutes.
Sprinkle cheese on top. Cover and heat until cheese is melted, about 1-2 minutes.
