Makes 11 servings, 1 cup each

You will need:

  • 12 oz package soy crumbles
  • 1 onion, chopped
  • 14.5 oz can black beans, drained and rinsed
  • 14.5 oz can kidney beans, drained and rinsed
  • 14.5 oz can great northern beans, drained and rinsed
  • 14.5 oz can crushed tomatoes
  • 1 can (using crushed tomato can) water
  • 8 oz can tomato sauce, no salt added
  • 1 tsp vegetable oil
  • 2 Tbsp chili powder
  • 2 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp crushed red pepper flakes

Microwave Steps:

  1. In a large microwave -safe bowl, add onion, vegetable oil, and soy crumbles. Heat in the microwave 4 minutes. 
  2. Add beans and mix well.
  3. Add crushed tomatoes, tomato sauce, water, and spices. Mix well. 
  4. Heat for 3 minutes and stir.
  5. Cover with plastic wrap and heat for 5 minutes. 
  6. Uncover and stir.
  7. Heat for 3 more minutes. Mixture will be very hot, let sit for few minutes before serving.

Stovetop Steps:

  1. Heat large sauce pan on medium and add vegetable oil. Add onions and sauté for 2-3 minutes, until onions start to become tender. Add soy crumbles and continue cooking for 5-10 minutes, until frozen crumbles break apart (should resemble ground beef). 
  2. Add beans, crushed tomatoes, water, tomato sauce, chili powder, garlic powder, black pepper, and crushed red pepper flakes to pan. Gently stir to combine ingredients. 
  3. Leave on medium heat until mixture boils, takes about 3-5 minutes. Reduce heat to low and simmer for 30 minutes.
