Interests:
Oxidative stress may contribute to the development of chronic diseases such as cancer and heart disease. One area of Dr. Fischer's research has focused on the effect of nutrients such as iron and vitamin E on antioxidant status, oxidative stress,
and biomarkers associated with colon and liver cancer development. Recent studies
have also included flavonoids, antioxidant compounds found in fruits and vegetables.
Another research interest is the examination of food and nutrient intakes of elderly
individuals.
