Tofu Salad (Mock Egg Salad)

Directions

4 ounces firm Tofu


1/2 tbsp. spicy brown mustard


1/2 tbsp. Nonfat yogurt


1 tbsp. reduced fat mayonnaise


5 slices low sodium pickles, diced


1 tbsp. sweet onion

In a bowl, mash the tofu into fine crumbs with a fork




Add remaining ingredients and mix well




Refrigerate at least 2 hours








Serve on bread, crackers, a bagel, or an English muffin
