
l1 pound fresh okra

yellow cornmeal

1/4
teaspoon salt

1/8 teaspoon
ground black pepper

1/4
cup nonfat buttermilk
|

1 egg, lightly beaten

Wash your hands
|
Wash the Okra. Snip the top and bottom from each pod. Cut the
okra into 1/2 inch pieces.

In a shallow bowl combine cornmeal, salt, and pepper
|
In a large bowl combine the buttermilk and egg
Stir in the okra and let stand for a few minutes
|

Coat the okra with the cornmeal mixture.
Place the okra on a nonstick baking pan
|
 
Bake at 450 degrees for 40-45 minutes or until crisp
|
