Oven-Fried Okra

l1 pound fresh okra


3/cups yellow cornmeal
1/4 teaspoon salt
1/8 teaspoon ground black pepper


1/4 cup nonfat buttermilk


1 egg, lightly beaten
Wash your hands

Wash the Okra. Snip the top and bottom from each pod. Cut the okra into 1/2 inch pieces.

In a shallow bowl combine cornmeal, salt, and pepper

In a large bowl combine the buttermilk and egg
Stir in the okra and let stand for a few minutes

Coat the okra with the cornmeal mixture.
Place the okra on a nonstick baking pan

Bake at 450 degrees for 40-45 minutes or until crisp
Serves 6 (1/2 cup servings) Per serving has 15 calories, 0.2 grams of fat, 0 grams of saturated fat, 0.6 grams of fiber, 5.3 mg of cholesterol
