and trained staff can work with the cook or chef when and of the following
tips can be used to develop tasty, healthy recipes.
- Change/add
healthy preparation techniques!
Try using seasonings, flavorings, herbs, spices, juices, vinegars,
stocks, rubs and marinades instead of oils, butter, cream sauces and
fatty meats.
- Change/add
healthy cooking techniques!
Roasting, broiling & grilling, sauté & dry sauté
(no fat added), and stir frying.
- Change an
ingredient by reducing it, eliminating it, or replacing it! For example:
Reduce fat when a recipe calls for eggs by using two egg whites in
place of one whole egg or use commercialized egg whites. The yolk
of the egg is where all the fat and cholesterol comes from.
- Replace fat
in muffins, breads, and other baked goods by using unsweetened fruit
puree in place of oil.
- Eliminate
fat all together by using fat free products such as fat free cottage
cheese, sour cream, and yogurt.
- Add new ingredients!
Adding new ingredients helps build flavor in low fat food items.
