Low-Fat Blueberry Muffins

2 cups reduced fat baking mix
2/3 cup skim milk
1/3 cup sugar
2 Tablespoons fruit puree or applesauce
2 egg whites
3/4 cup frozen or fresh blueberries

 

 


Preheat oven to 400 degrees F


Place paper baking cups or grease bottoms of muffin tray (regular or mini).

Stir all ingredients except blueberries just until moistened.

Gently stir in blueberries. Divide batter evenly among muffin cups.

Bake for 13-18 minutes or until golden brown.
