This cold tomato salad is best when accompanying very spicy dishes.



INGREDIENTS

2 limes 1/2 teaspoon sugar salt and freshly ground pepper, to taste 2 onions, finely chopped 4 Roma tomatoes, finely chopped 1/2 cucumber, finely chopped 1 green chili or finger pepper, finely chopped 2 tablespoons of chopped, fresh cilantro leaves 2 teaspoons of mint leaves
  1. Microwave the limes for 40 seconds and extract the juices into a small bowl.
  2. Add sugar, salt, and pepper.
  3. Mix together well until the sugar and salt have dissolved.
  4. Add the onions, tomatoes, cucumber, chili, and cilantro leaves, reserving a few.
  5. Chill and garnish with cilantro and mint before serving.
