Dr. Mary Ann Johnson.  Dr. Johnson provided academic guidance and leadership throughout my graduate school experience.  She encouraged participation in professional organizations, including the Academy of Nutrition and Dietetics.   I was well equipped for the Registration exam and a successful career in dietetics. 

Current Career: 

CEO Eckstein Enterprises, Inc.

I work with older adults, providing consulting services to skilled nursing facilities, assisted living facilities and group homes.  This includes completion of nutritional assessments, identifying the nutrition diagnosis then working with the interdisciplinary team to provide optimal nutrition in a positive dining environment. 

Professional Involvement:

Chair-Elect of Dietetics in Health Care Communities (DHCC), a Dietetic Practice Group of the Academy of Nutrition and Dietetics. 

Why UGA Graduate School: 

I was working with elders in a skilled nursing facility.  UGA was involved with the Georgia Centenarian Study, an interdisciplinary project looking at the oldest old of community-dwelling adults.  A graduate assistantship was available with Dr. Johnson to participate in the dietary habit analysis portion of the study.   This was a perfect fit for me as my passion was providing food to older adults.  My research project involved evaluation of oral health and demographic risk factors for poor nutrient intake patterns in the elderly, utilizing data from the Georgia Centenarian Study.  UGA also offered a Graduate Certificate of Gerontology which offered additional education of the needs of elders.

Additional Benefits: 

The UGA Graduate Program develops skills to evaluate research and understand evidence-based practice.  This skill is also helpful in helping clients with supplements, vitamins, etc., as well as educating the clients on appropriate usage.  The program also helped to develop my presentation and writing skills which have been invaluable in my commitment and service to the Academy of Nutrition and Dietetics in projects such as reviewing position papers, and as co-editor of the DHCC Pocket Resource for Nutritional Assessment, published in October of 2013, and Editor /Author of the Emergency Manual published in 2012.
