Research

Betsy is currently conducting her doctoral research in the Human Nutrition Labortory under the direction of Dr. Jamie Cooper. Her broad research interest involves understanding how simple dietary modifications can affect vascular function and overall health. 

Teaching

Betsy was the instructor of record for FDN 2100-Human Nutrition and Food, Fall 2021. As IOR, Betsy adapted lecture material to engage students, wrote exams on content covered in class, and provided in-person, email, and online assistance to students when needed.
