Sitara’s dissertation project aims to survey microbial hazard present in and on fresh produce at the retail level in the context of the prevailing socioeconomic and demographic features of the communities the respective retailers serve, with a focus on genotypic and phenotypic characterization of Salmonella enterica strains isolated from these commodities. This project furthermore aims to characterize the behaviors, motivations, and perceptions of communities across Athens-Clarke County, GA with regard to food safety, dietary patterns, and their respective food environments. Sitara is carrying out her project under the direction of Dr. Carla Schwan.
